Mackerel Pâté


After eating lots of really rich food last week for mum’s birthday, I’m craving really simple food. The beautiful weather might also be something to do with this. Just the smell of fresh, raw cucumber makes me feel healthy instantly, so I’ve been eating loads – and paired with this citrussy, spicy fish pate…well, this is simple cooking at it’s best!
It’s perfect for a really quick but seriously delicious lunch, plus it’s pretty cheap and easy. It also makes a great dip or starter, with a watercress or rocket salad.
Alas, it’s not the prettiest of pate’s so you’ll need to jazz it up with a few colourful crudités if you’re looking to impress.
Make sure you use peppered mackerel steaks for this for a little extra spice, and if you’re really into it you can forgo the crème fraîche and just add more horseradish. It’s also delicious with my Soda Bread.

You will need

2 peppered mackerel steaks
2 tbsp horseradish
2 tbsp crème fraîche
Juice of 1 lemon
Crudités and crunchy bread to serve

Break the mackerel steaks into a food processor, along with the horseradish, crème fraîche and lemon juice. Blend until nice and smooth. Serve. Told you it was easy!
